Sure many registrars have their security measures, but I'll tell you that Moniker has the most sensible because they focus on where many potential hijackings occur. Registrars don't really want people to know their security measures. But I'll tell you two: they don't let you unlock your domain name online, but they'll call you via phone to verify the transfer-out. Note also they have toll-free phone support, a big plus for people who don't know how these things work yet want potentially faster results. Unfortunately there's no current "official" definition of what exactly is domain hijacking.
