Domain Hosting and Mail Different Server

Hi,

I currently have a domain pointing (using GoDaddy) to a hosting server on let's say 123.45.67.89, however I would like the mail to be going to my server (IP: 11.22.33.44). 

Is such a thing even possible? How would I be able to go ahead and do this?

I have changed the MX record in godaddy to smtp .domain  but it still points to the host IP address.
